Kitchen for the SoulTry this delicious combination of amazing ingredients in a very healthy meal. Egg Plant dish made with Rice Flour and Zucchini noodles in a perfect combination of taste and nutrients.
Ingredients:
1/2 of a green plantain
1 Zucchini
3 small tomatoes or 1 big tomato
3 big Mushrooms
2 Long Chinese Egg Plants or a small regular eggplant
a couple of sweet peppers (red and yellow)
Cilantro (a small amount)
This is a very simple recipe and it can be changed or adjusted according to whatever ingredients you have at hand. The idea is to make a stew with eggplant that will be served over the pasta. The pasta is a combination of Zucchini noodles and rice flour pasta.
To begin cut half plantain in small squares and bring to boil in small amount of water, once it begins to soften add the eggplant (the eggplant should have been cut and soaked in water with salt for about 20-30 minutes before) poor the chopped tomatoes and red and yellow peppers. Cook until soft, at the end you add chilli pepper.
The idea is to cook all until the mix gets a bit think, In the mean time cook the pasta as you would do normally. I boil the water and ad the pasta cover turn off fire and let alone for 7 minutes. then rinse.
Right before serving, add olive oil to the mix and unpasteurized soy sauce. This two should not be cooked. Allow the pasta to cool a little and mix with the zucchini and serve with small amounts of cilantro on top. Add some sunflower sprouts for decoration and more health touch of health.
